Attractions in Orlando, Florida Excluding Theme Parks?

My boyfriend and I are going to Orlando for one day for his birthday. We live north of Orlando in Florida. What would be some enjoyable attractions other than theme parks?

3. We usually do nothing but theme parks, but we spent a few days out of the parks in August. We really enjoyed going to Celebration, FL for dinner. It's the town that Disney built and is very charming. You get out of your car and walk along a small lake. There's a movie theater and several restaurants and small shops. We really enjoyed the Market Street Cafe - excellent food! If you want a more energetic atmosphere and nightlife you could do Universal's City Walk or Downtown Disney Pleasure Island. We also enjoyed going to the outlet stores and hitting sales (great shopping) and the huge Ikea store. It's crazy big! There's the Bok Sanctuary with the carrilon.
4. The orlando science center, the orlando museum of art, the morse museum of art, the central florida zoo. Blue springs, wekiva springs, delon springs and sugar mill, harry p leu gardens.
5. There is so much to do here! You could go Canoeing at Wakavia Springs Enjoy an evening at Bok Tower Gardens Explore a number of state parks Gatorland is cute and fun http://www.orlandofuntickets.com/Gatorland/ Drive to St Augustine and explore all of the wonderful historical sites, and take a haunted St Augustine tour! Florida ROCKS I love living here!
