Finally Today

If I peel potatoes today and I'm not cooking until tomorrow, will they keep well in the frig in a pan of water?

I didn't really want to cook today and re-heat tomorrown unless I absolutely have to. Yes, I know. I've used vinegar or lemon juice in the past so they wouldn't turn color and the mashed potatoes tasted like lemons or vinegar.

1. Yes , they will be fine tomorrow.I do this to leach out the potassium for my wife's diet.
2. Yes, they will not brown if you have them covered in water. I've done this several times before without issues. Anything to make your day easier!
3. yes it works just fine, I am doing the same thing. Make sure they are covered completely with water, then tomorrow, drain and add new water. Some people may suggest lemon juice, do not do that, covering with water is enough
